WIENER BEINSCHINKEN
Handwerk und Esskultur
Viennese ham is part of this city’s food culture and its culinary ambassador. For five generations, the Thum family has been perfecting the craft to which ham lovers owe their favorite ham. Viennese ham is an icon of Viennese cuisine, and as such, it has long deserved its own book. That’s what Roman Thum thought, who runs the ham workshop in Vienna’s 23rd district with his family. The world’s first book dedicated to the Viennese ham on the bone.
